This tea is popular in Tunisia, Algeria and Morocco. To prepare you need a Gunpowder green tea (I used Formosa Gunpowder green tea) , Mint and sugar. It is a strong tea, sweet and smoky with mint flavor. Here is a recipe:
- 2 tsp Formosa Gunpowder green tea
- Leaves from 3 large springs of mint
- 450 ml of water heated to 90C (195 F)
- 2.5 tbsp sugar
First place tea leaves and mint leaves in a teapot, add the hot water, wait 5 minutes.
Strain the tea into a saucepan and add 2.5 tbsp sugar. Use medium heat to bring to a simmer while stirring the tea and mixing the sugar. once simmering, pour the sweetened tea back in the teapot (I removed the tea leaves but you can probably leave them if you like).
Pour into cups from a height of 30 cm (if you can!) to make a froth on top of the tea. Add some fresh mint leaves in the cup. Enjoy!
